"Perfectly Chocolate" Valentines Weekend

This weekend was the definition of relaxing! My boyfriend has been sick so we made an effort to have a super low-key Valentines weekend! I think we succeeded! 

Saturday started with a morning walk along Lake Pontchartrain followed by an afternoon filled with reading and hanging out. That night we went to Zea Rotisserie & Grill for our Valentine's Dinner Date.  We usually do Italian for Valentines and for our Anniversary but since we gave up cheese for lent it was safer to avoid Italian food all together! Either way we love Zea's rotisserie chicken! Mmmm house rub rotisserie with a side of veggies! That night was capped off with a How I Met Your Mother Netflix marathon. 75% of the day was spent in pajamas and for us that was a rare occurrence! 

Two things were on the agenda for Sunday: 1. Cake baking and 2. Zoolander. My boyfriends birthday is this coming Wednesday and we decided that since we were laying low this weekend, we would celebrate on Sunday! After the present opening we decided it would be fun to bake his birthday cake from scratch! We followed Hershey's "Perfectly Chocolate" Chocolate Cake  and Hershey's "Perfectly Chocolate" Chocolate Frosting recipes. Oh man did they come out perfect (I will share a picture of the cake Wednesday)!!

In case your curious… 


Ingredients: 
  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY'S Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water (For the recored I was totally skeptical about this part… it makes the batter SUPER thin… don't freak out like I did… it works!) 
Directions:
  1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
  2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
  3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING. Makes 12 servings.
Hershey's "Perfectly Chocolate" Chocolate Frosting

Ingredients:
  • 1/2 cup (1 stick) butter or margarine
  • 2/3 cup HERSHEY'S Cocoa
  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
Directions:
  1. Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.
  2. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.
(Not my cake… but you get the idea) 

My boyfriend and I have also given up desserts for lent with the one exception of a slice of birthday cake for his birthday… since we were celebrating on Sunday we each had a piece and promptly put the rest in the freezer. Sooo yummy!! 

After cake baking we went to go see Zoolander 2. It was hilarious! Exactly what we needed for a low-key weekend. I will post about the movie tomorrow =) because I have too many thoughts to cram into this one post!! 

Which brings us to today… where my boyfriend and I are both home from work sick. Ick. I have been camped on the couch with my new nook book fighting a fever and my boyfriend has commandeered the living room table and is working from home dealing with the remains of an awful cough. Aka… we are a germ fest… #NoFun
